Sweet Potato Crunch

3 cups canned sweet potatoes or one 29 oz can

1/4 cup milk

1/4 cup melted margarine

1/4 cup sugar

1 teaspoon vanilla

2 eggs (beaten)

Mash the sweet potatoes in their juice. Combine all ingredients and mix well. Pour into well-greased baking dish. Prepare topping.



1/2 cup brown sugar

1/2 cup melted margarine

1/2 cup flour

1 cup chopped nuts

Mix brown sugar and margarine, gradually adding flour. Mix well. Stir in nuts. Sprinkle over potato mixture.

Bake at 350 degrees for 30 minutes.
