Shrimp Sauce Piquant

1/3 cup of oil

1/3 cup flour

1 medium onion, chopped

3 cloves garlic, minced

1/2 cup bell pepper, chopped

1/3 cup celery, chopped

3 pints water

1 small can tomatoes

1/2 teaspoon Tabasco sauce

2 teaspoons salt

1 1/2 pounds shrimp

Make a roux by browning oil and flour. Add onions, garlic, celery, and bell pepper and cook until onions are transparent. Add water, tomatoes, Tabasco sauce and salt and simmer mixture over low heat for about 1 hour. Add shrimp and simmer until tender (about 20 minutes). Serves 4.
