Chicken and Dressing

1 hen – boiled and de-boned (save broth to put in dressing)

1 regular pan of cooked cornbread

3 – 4 slices of bread (grated)

1 cup cooked rice

2 small or medium onions (diced)

1 1/2 – 2 cups of celery (diced)

10 – 12 eggs

Salt and pepper to taste

Mix all of the above ingredients and add enough broth to soak the misture. Spray pan with Pam. Bake at 325 until done. Should be slightly golden on top. (Be careful not to overcook)

Note: This recipe makes a large serving of dressing, but you can freeze some raw and bake later.
